Blue Whiting Fish Cakes

Simple fish cakes for the whole family's dinner. A dinner of blue whiting cakes is easy on the budget, since this fish is far from a pricey ingredient. But that doesn't stop it from making a family dinner both delicious and wholesome.

  1. Step 1:

    Gather the ingredients for the fish cakes. My fish is frozen — fresh is better, of course, but we can't get it around here. It's best to pour milk over the bread right away so it can soak. For fresh herbs I'm using dill; you can swap in parsley or use a mix. Add other spices to taste if you like.

    First, the fish needs to thaw. You can leave it to thaw on its own or use the microwave. Either way, it's best not to thaw it completely — that makes it easier to fillet. Rinse the thawed fish and remove the head, tail, and fins. Fillet the fish, taking out all the bones. Some people grind the fillet with the bones still in and pick the bones out afterward; I remove the bones before grinding.

    Peel the onion and cut it into quarters. Lightly squeeze out the soaked bread. Run the prepared fish fillet through the grinder along with the onion and bread.

    Add the cracked raw egg to the ground fish along with salt and pepper to taste and the chopped fresh dill. Mix everything thoroughly until smooth. Some people add mayonnaise for juiciness, but I'll tell you up front — these cakes come out very juicy even without it.

    With wet hands, shape the fish mixture into cakes. You can fry them as is, or dredge them in flour or breadcrumbs first. I coated mine in breadcrumbs.

    Heat a skillet, add a little vegetable oil, and add the cakes. Over medium heat, fry them until golden on the first side, then flip each one and fry the other side until golden as well.

    Serve the finished fish cakes hot. Boiled rice, mashed potatoes, or vegetables all make good sides. This is a kid-friendly dish.

  • I've given the pan-fried version here. You can also cook these cakes entirely in the oven, or fry them on both sides first, arrange them on a baking sheet, brush with sour cream, and bake.
