- Cut the pork into 6 even slices—or, even easier, buy ready-cut schnitzels; they'll be just the right thickness.
- Pound the schnitzels well on both sides.
- Mix the salt and spices, then rub the mixture into both sides of the schnitzels.
- Heat the oil in a skillet and sear the schnitzels over high heat until golden.
- For the sauce: wash the plums, pit them, and dice small. Pour the wine into a saucepan and add the plums and powdered sugar. Bring to a boil and simmer about 10 minutes, until the liquid has reduced by half. Stir in the butter at the end and take off the heat.
- Serve the schnitzels with the plum sauce. Steamed rice makes a good side dish.
