Lazy Belyashi (Meat-Filled Fritters)

  • 1) Stir the baking soda into the warm kefir, then add the sugar and salt, mix, and gradually work in the flour. The batter should be thick — it shouldn't pour off the spoon but drop off in clumps. 2) Add the finely chopped onion, fresh herbs, green onion, seasonings, salt, black pepper, and egg to the ground meat, and mix well. 3) Fry over low heat on a preheated skillet: drop a dessertspoon of batter, spread it out, add a spoonful of the meat on top, and cover with another spoonful of batter, pressing gently so the batter seals around the filling. Fry on both sides, covered if you like. Serve right away with sour cream. Enjoy!
