  • First, make the filling. Peel the bananas and slice them into thin rounds, and coarsely chop the nuts. Any nuts work well here, so use whatever you like best — light, fragrant walnuts or richer-tasting peanuts both pair beautifully with banana. Mix the prepared ingredients with the honey. Spread this mixture evenly over two slices of bread, leaving a little margin around the edges, then top with the remaining slices. You'll end up with two sandwiches. Set a skillet over medium heat, and while it warms, make the egg dip: crack the eggs into a deep bowl and whisk them with the milk. Dip the sandwiches in the egg mixture so the bread soaks up a little. Melt a pat of butter in the hot skillet and fry each sandwich on both sides until golden — it'll take no more than 3–4 minutes. Dust the finished toast with powdered sugar. Serve with light yogurt or whipped cream. Enjoy!
