Pork Roulades with Mushrooms
Make these and your family will be sure to ask for seconds! They turn out wonderfully tasty — tender, fragrant pork rolls that pair perfectly with mashed potatoes. Just right for a family dinner or a special occasion.

Dice the onion and slice the mushrooms.

Melt the butter in a skillet, add the onion, and fry for 2–3 minutes. Add the mushrooms and cook until the liquid has evaporated. Right at the end, stir in the minced garlic and chopped herbs.

Cut the pork into slices about 1/2 inch thick.

Pound each slice thin.

Grate the cheese and stir it into the mushrooms. Season with salt and pepper to taste.

Season the pork with salt and pepper. If a pounded slice came out large, cut it in half. Put about 1 teaspoon of filling on each piece and roll it up. If you like, tie each roll with kitchen twine or secure it with a toothpick.

Fry the rolls in vegetable oil on both sides until browned. Transfer them to a pot, pour in a cup of water (a little more is fine — it should come about halfway up), and simmer over low heat for about an hour, or until tender.

If you'd like a sauce, add 150 g of sour cream to the pot about 10 minutes before the end (first stir 1 teaspoon of flour into the sour cream — it thickens the sauce and keeps the cream from curdling). Simmer until done. You'll end up with a delicious sour cream sauce.
