Step 1:
How to freeze fresh cucumbers for the winter? Prepare fresh, dense pickled cucumbers (prickly). You can, of course, use smooth fruit, but what's the point?! After all, they are now available almost all year round. Rinse the cucumbers thoroughly under running water to remove possible soil residues. Let the water drain, otherwise, when frozen, it will give an additional amount of frost in the package.
Step 2:
With cucumbers, cut off the tips on both sides.
Step 3:
Chop cucumbers arbitrarily. You can even grate them on a coarse grater. The shape of the slicing will depend on which dishes you plan to add such cucumbers to. I chose a small straw to use in salads.
Step 4:
I will freeze cucumbers in special tight bags for the vacuum packer. But any tight package suitable for freezing, or a bag with a zip lock, or even a plastic container, will do. But, in any case, I recommend freezing small portions, about one dish. So cucumbers will be more convenient and faster to defrost.
Step 5:
Pack cucumbers with a vacuum packer or other chosen method. Set the vacuum packer to work at low pressure so as not to flatten tender cucumbers.
Step 6:
Put a label with the date of freezing on each package. This will allow you to control the freshness of the blanks. Send the packages to the freezer with a temperature of -18 degrees and below. There the blanks can be stored all winter.
Before adding cucumbers to the salad, release them from the packaging and let them lie down for a few minutes at room temperature. The defrosting time will depend on the thickness of the formation. The thinner the layer, the faster the vegetables will be ready to work.
I added such cucumbers to a salad of white cabbage, carrots and cherry tomatoes with a dressing of fragrant sunflower oil. Cucumbers perfectly complemented and refreshed the salad.
