  • Lingonberry jam has a wonderfully distinctive flavor, so you can pair it with almost anything. Made this way, the jam comes out not too sweet but with a rich taste and aroma. Beyond the usual pairings — with tea, pancakes, ice cream, or in baking — it's lovely with roasted meat or poultry, and even with fried cheese. And of course it keeps well for winter. Sort and rinse the fresh lingonberries, pour boiling water over them, and drain in a colander. Put the lingonberries in a pot, add the water, and cover with the sugar. Set the pot over low heat. As it cooks, stir gently and add the cinnamon stick and clove buds. Once it comes to a boil, cook over low heat for 5 minutes. Then turn off the heat and let the jam cool to room temperature. Spoon the cooled jam into jars and seal tightly. A delicious lingonberry jam that takes just half an hour to make!
