Red Sea Salad with Shrimp

  • This salad isn't hard to make — the main thing is to prep your ingredients ahead. Specifically: boil and cool the shrimp (remember, they cook very fast; overcook them and they'll turn rubbery and bland); wash all the vegetables and herbs, pat them dry with paper towels, and spread the lettuce leaves on a cloth to dry; take the crab sticks out of the freezer ahead of time so they can thaw at room temperature; and grate the hard cheese on a coarse grater, or cut it into thin matchsticks with a sharp knife — whichever you prefer. Set aside some shrimp to garnish the finished dish and cut the rest into small pieces. Do the same with the crab sticks, cutting them to match the shrimp. Halve the bell pepper, cut out the stem, and clear out the seeds, then dice the flesh into small cubes. Try to cut everything into roughly equal pieces — it makes the salad prettier and helps the flavor, too. You can save a little pepper to garnish the finished salad, but it's optional — you can decorate it however you like, for instance with just shrimp and fresh herbs. Set a small skillet over medium heat and add the olive oil. Once it's hot, add the diced pepper and cook for 2–3 minutes, stirring constantly, until it softens. Transfer the pepper to a plate and let it cool completely. Now move on to the tomatoes: halve them and cut out the stem end. Use a small spoon to scoop out the seedy pulp onto a separate plate — you won't need it. Cut the rest of the tomatoes into the same cubes as the bell pepper. In a salad bowl of the right size, combine the shrimp, crab sticks, bell pepper, and tomatoes. Add the grated hard cheese. Toss everything together, then dress with the mayonnaise, sprinkle with paprika, and stir again. Taste the salad and add sea salt if needed, then stir once more. Line a pretty flat plate with the dried lettuce leaves and mound the salad on top. Garnish the finished dish and serve, or chill it in the fridge until you're ready to serve. All done!
