Egg-Free Mayonnaise with Flour and Lemon

Indispensable for salads and dishes made during a fast. Quick to whip up, and completely egg-free. During a fast you sometimes long for your favorite dishes — the ones made with mayonnaise, say. But regular mayonnaise is built on eggs, which are off-limits during a fast. This egg-free version is the answer.

  • Whisk the flour and water together carefully so no lumps form. Set it over the heat and cook until thickened, then let it cool. Add the sugar and salt and beat everything with a blender (a whisk works too, it just takes longer). Add the oil a little at a time, beating without stopping. Then add the lemon juice, beat once more, and it's ready to use. This mayonnaise works well in salads and for baking, and it keeps in the fridge for several days.
