  • My mom taught me this recipe. She's Moldovan, which is why peppers show up in every form in our kitchen — but this one is my favorite. It comes together fast, tastes wonderful, and doesn't cost much. Doctors will tell you that eating peppers helps guard against hardening of the arteries. Bell peppers are good for you and just as tasty canned as they are fresh. So let's make peppers in oil. It's best to use peppers in a mix of colors — yellow and red especially. To me those colors are a cure for the winter blues: come January, all you have to do is open a jar of peppers in oil. Or don't open it at all — just pick it up and admire it. Wash the peppers and remove the seeds. Add the sugar to 1 liter (about 4 cups) of water and set it over the heat; once it boils, stir in the salt and the oil — and be careful not to burn yourself. When the brine returns to a boil, drop in the peppers, cut into strips, bring it back to a boil, and cook for 15 minutes. Pour in the prepared vinegar, add a few allspice berries, pack everything into jars, and seal. Your bell peppers in oil are ready.
