Pan-Fried Meat Patties

Step 1:
How do you make pan-fried meat patties? Start by gathering your ingredients. You can use store-bought ground meat or grind your own at home. If it's frozen, thaw it first. I used ground pork here. If you'd rather, you can fry the patties in vegetable oil instead of butter.

Peel the onion and rinse it under running water. Cut it in half, then finely dice each half. Alternatively, grate it on a coarse grater or pulse it in a food processor.

Transfer the ground meat to a deep bowl, add the chopped onion, and mix. Season with salt and black pepper to taste. Feel free to add your favorite spices.

Add the raw egg to the meat mixture. Knead it with your hands until smooth — a spoon won't get you the right consistency. For an even smoother texture, throw the meat: pick up the whole mass and slap it down into the bowl a few times.

For the coating, use sifted wheat flour. Shape the meat mixture into patties. Unlike regular cutlets, these are made small and round. Wet your hands with cold water to keep the meat from sticking. Roll each patty in flour on all sides.

Melt the butter in a skillet over low heat, add the patties, and fry until golden brown on both sides. Keep an eye on the heat — butter can scorch if it gets too hot. To make sure the patties cook through, cover the pan for the last 5 minutes.

Serve the meat patties with a side dish. If they came out a little greasy, set them on a paper towel to blot the excess. Mashed potatoes, pasta, and buckwheat all pair well. Enjoy!

If you like, go beyond pork and use a blend — equal parts ground beef, pork, and chicken works great.
