Gelatin and Powdered Sugar Fondant

Cooking method

    Measure out the ingredients.

    Cover the gelatin with room-temperature water.

    Mix well and leave it for about 20 minutes.

    Set the gelatin over a double boiler and add the honey. Warm the mixture well until it's fluid and smooth.

    Sift the powdered sugar and make a well in it.

    Add the gelatin-honey mixture. Stir with a spoon at first, then continue kneading on the counter by hand.

    As you go, add coloring for a perfectly white fondant. After that you can add other colors too. Without the white, the fondant is a milky shade, and colored fondant won't be as pure or vibrant.

    Wrap the finished fondant in plastic wrap and refrigerate it for 30 minutes. To make the fondant easier to roll out, dust your surfaces with powdered sugar or starch.
