Chicken "Hen and Chicks" Salad
A salad shaped like a hen with her chicks will delight your guests on New Year's Eve! I suggest making it for the holiday table as the wife and children of the rooster — the symbol of the coming year. Simple ingredients and an easy method will save you time as you prepare for the celebration. Thanks to fresh bell pepper, this salad has a pleasantly unusual flavor — a nice change from the usual Olivier and the same old salads you make year after year.

- Set the chicken fillet and eggs to boil. 2. Cut the fillet into small cubes. 3. Finely chop the onion and mushrooms and add them to the meat. 4. Grate the hard cheese on a coarse grater and add it to the rest. 5. Grate the eggs too, but set aside three yolks to decorate the salad. 6. Add the mayonnaise and mix everything together. 7. On a suitable platter, shape a hen and her chicks, then grate the reserved yolks over the top on a fine grater. 8. Cut the hen's wings and tail from onion. Shape the comb, wattle, and beak from bell pepper, and make the eyes from cloves. 9. Garnish the salad with fresh parsley and refrigerate for 1–2 hours. Enjoy, and happy New Year!
