Fluffy Kefir Skillet Flatbreads
Tasty flatbreads from just a handful of ingredients. A simple recipe with the bare minimum of ingredients that every kitchen has on hand. These flatbreads can stand in for bread, and even a beginner can make them.

Step 1:
Pour 250 ml of kefir into a bowl.

Next, add 0.5 teaspoon of baking soda. The kefir activates the soda: its acid reacts with the soda and releases carbon dioxide, which is what makes the dough rise.

Add 0.5 teaspoon of salt.

Then add 1 tablespoon of sugar to the mixture.

Stir the ingredients thoroughly.

Then crack 1 egg into the mixture.

Add 2 tablespoons of vegetable oil. Stir the mixture thoroughly again.

Sift 450 grams of wheat flour into the mixture. You may need a little more flour than the recipe calls for.

Knead the dough. Don't pack in too much flour — the dough should be soft and tender. Start by mixing with a whisk, and once the flour has absorbed most of the liquid, switch to kneading by hand. To keep the dough from sticking, oil your hands with a little vegetable oil.

Dust the work surface with a little flour and turn out the dough. Divide it into several pieces.

Shape the dough pieces into balls.

Then roll out each piece into a flatbread about ¼ inch (5–6 mm) thick.

Make a few small slits in the middle of each flatbread.

Fry the flatbreads in well-heated vegetable oil over medium heat.

Fry until golden on both sides. Take the flatbreads out of the pan and set them on paper towels — the paper will soak up the excess oil.

The fluffy kefir flatbreads are ready! Serve them cold or hot. Enjoy!
