- Cut the beef into portions about 3/4 inch (1.5–2 cm) wide. Set each piece on a board and pound it with a meat mallet until it's thinner than you'd want for a steak. Rub the resulting "tongues" all over with salt and pepper. Melt the lard (or any other fat or oil) in a skillet and fry the meat until it develops a golden-brown crust — that crust is your sign the langet is done. Spoon the pan juices and melted butter over the meat, and serve with your favorite side. A good meat sauce works well here.
- Rinse the meat and be sure to pat it dry with a paper towel — extra moisture keeps it from searing and it'll steam instead of frying.
