    1. Rinse the hazel grouse and pat dry. It's best to marinate the birds first: combine lemon juice, dry spices, and salt, rub the mixture all over the grouse, and refrigerate for a couple of hours. 2. Heat a heavy-bottomed skillet, add the vegetable oil, and lay in the grouse. Fry on both sides until golden. 3. Cover with a lid and let the dish rest for 10 minutes — the meat will turn out even softer and more tender.
