They say the recipe for cottage cheese pancakes comes from Austria. Oddly enough, my mother, who has never been to Austria, cooks exactly the same. He says his grandmother from Tambov taught him.
To start, let's cook pancakes. Each hostess has her own recipe, personally I do this:
beat eggs, add a little milk, salt, sugar, beat again;
I add flour, not all of it, I rub the dough with a spoon so that there are no lumps;
pour in some of the milk, stir, add flour again;
I rub the dough, and then I dilute it with milk to the desired consistency;
pour in vegetable oil, stir;
I fry thin or thick pancakes (for thick ones, the dough should be thicker).
For the filling, rub the cottage cheese with egg, sugar and cream, add the washed raisins. Or take a ready-made cheese mass from the nearest supermarket. Smear the filling on our pancakes, roll them into a roll, cut each one in half diagonally. Put it in a frying pan or any form of overlap. Prepare the sauce: beat the yolk, sugar and milk. Pour our pancakes and put them on the stove on a small fire or in the oven at 180 degrees for half an hour to turn brown. You can decorate commodity pancakes with something, or you can eat it like that, one kind of such food does not leave anyone indifferent anyway.
