Step 1:

Step 5:
Beat the mass with a mixer at medium speed. The consistency of the dough should be smooth, homogeneous, similar to thick sour cream. Leave the dough in a warm place for 5 minutes to activate the soda.
Step 6:
Cover the cake pan (diameter 18 cm) with baking paper, grease the bottom and sides with a piece of butter so that the biscuit does not burn. Just in case, wrap the form from the outside with foil. Pour out the dough, smooth the surface with a silicone spatula.
Step 7:
Cover the dough with foil on top. Send the dough form to a preheated 180 degree oven. Bake for about 1 hour. Everyone's ovens are different, so the baking time may vary. Check the readiness of the biscuit with a dry wooden skewer or toothpick. Pierce the biscuit with it in several places, if it comes out dry, then it's ready. Remove the mold from the oven, leave to cool for 5 minutes. Release the cake from the mold and finally cool on the grill.
Step 8:
Ready-made sponge cake on kefir for cake can be wrapped with cling film and left for 1 day. So it will not break and crumble when cut.
