Step 1:
How to make pumpkin cookies? Prepare the necessary products. We will need the pulp of a baked pumpkin. During the baking process, the weight of the pumpkin will decrease by about a quarter, so take the weight of the raw pumpkin with a margin. Take out the butter in advance so that it softens at room temperature.
Step 2:
Peel the pumpkin, cut into pieces. Wrap the pumpkin in foil.
Step 3:
Bake the pumpkin in a preheated 180C oven for about 30 minutes until soft.
Step 4:
Cool the pumpkin, chop it to a puree. You can do this with a blender or just mash it with a pusher.
Step 5:
Mix flour with baking powder, sift into a wide bowl. Why sift flour? To enrich the flour with oxygen. This will increase the rise of the dough during baking and the cookies will bake well.
Step 6:
Rub the soft butter with sugar and vanilla sugar.
Step 7:
Beat the egg into the resulting mass, mix until smooth.
Step 8:
Add coconut chips, mix.
Step 9:
Put pumpkin puree into the resulting mass, mix well.
Step 10:
Pour in the flour sifted with baking powder. I advise you not to add all the flour at once. Why do I need to do this? So that the dough does not turn out too dense and steep. This dough will not rise well, and the cookies will turn out to be hard. It is better to pour the remaining flour in the process of kneading the dough as needed.
Step 11:
The dough should be soft, not sticky to the hands.
Step 12:
Roll the dough into balls the size of walnuts. Place the balls on a baking sheet lined with parchment, while pressing each ball a little on top.
Step 13:
Bake pumpkin cookies in a preheated 180C oven for about 25 minutes until lightly browned (focus on your oven).
Step 14:
Cool the finished cookies completely and serve. Bon appetit!
Cookies are moderately sweet. If desired, you can increase the amount of sugar or sprinkle the cookies with powdered sugar.
