Cooking method
Prepare the ingredients. Kefir must be taken out of the refrigerator in advance so that it is not cold, at room temperature. It's okay if it's not fresh, the dough will rise even better. Let's start with the dry ingredients. In one bowl, pour the sifted flour, add a pinch of salt, soda and citric acid. Mix thoroughly. Since this pie is prepared without eggs, the dough will be slightly lighter than usual due to the lack of egg yolk. Therefore, if you want the pie to be yellowish in color, then you can add turmeric to the ingredients, it will give a pleasant yellow shade to the eye, but it will not spoil the taste of the pie.
Pour warm kefir into another bowl, add sugar, mix so that the sugar completely dissolves, add vegetable oil, mix.
Pour the dry ingredients into a bowl with liquid ingredients and mix thoroughly so that there are no lumps left. The dough should be thick as sour cream and homogeneous in consistency. You can leave it in a bowl to stand for about 20 minutes so that the ingredients combine, there is an interaction reaction of soda and acid, and the dough increases in volume. Meanwhile, preheat the oven to 180 degrees.
Grease the mold with butter and sprinkle a little flour on the bottom and sides. Pour the dough into the mold. Sprinkle with fresh or frozen raspberries, if desired and available, you can add other berries, pieces of fruit, candied fruits or nuts.
Bake the pie for about 30 minutes, but you need to focus on the operation of the oven, it depends on the size of the shape and, accordingly, the thickness of the dough. We check the readiness with a wooden skewer or toothpick.
We serve a pie with tea, coffee or milk. It is delicious both hot and cold, it does not harden for a long time.
