Step 1:
How to make liver pies in the oven? Prepare the products according to the list. If necessary, defrost the liver on the bottom shelf of the refrigerator in advance. Wash the chicken liver and remove blood clots, light flagella - bile ducts and gallbladders, if any.
Step 2:
Wash the thawed chicken hearts. They also need preliminary training. I usually cut off excess fat from the outside and remove large arteries. Next, I cut the hearts in half and remove the blood clots inside.
Step 3:
Put the chicken liver in a saucepan with cold water. During cooking, remove the foam formed on the surface with a slotted spoon. The liver cooks very quickly. After boiling, it will be ready in 10-15 minutes.
Step 4:
Put the chicken hearts in a clean saucepan with cold water. After boiling, they will also be ready in 15-20 minutes.
Step 5:
Peel the onion, wash, dry, slice and fry in a frying pan in sunflower oil until golden brown.
Step 6:
While the onion is being fried, there is time to prepare the stuffing. Chicken hearts and liver pass through a meat grinder. You can use a blender for this purpose.
Step 7:
Add the fried onion to the bowl with minced meat. Separate the egg white from the yolk. Cover the yolk and set aside for a while. And add the raw protein to the minced meat. Add salt to taste. Mix thoroughly.
Step 8:
Roll out the finished puff pastry dough thinly. With a knife, cut it into squares with a side of 5 centimeters. Put the liver filling in the center. I laid out a teaspoon with a slide.
Step 9:
Pinch the edges of the pies with a triangle. And press down slightly with the prongs of the fork so that the seam sticks together better and looks beautiful. Add half a teaspoon of boiled water to the yolk set aside earlier and mix until smooth. So the yolk will be more convenient to use for lubrication.
Step 10:
Use a cooking brush to brush the pies with egg mixture on top. And sprinkle the pies with sesame seeds. Bake the pies in a preheated oven to about 200 degrees for 15-20 minutes or until the dough is ready and the pies are browned. Focus on the features of your oven.
The pies turned out crispy and very tasty. The taste of fried onions sets off the sweet-salty liver filling.
Instead of chicken liver, beef or pork offal can be used.
