Step 1:
How to make a charlotte on mayonnaise with apples? Prepare the ingredients. Take sweet and sour apples for charlotte - the most suitable varieties are Antonovka, Semerenko, Granny Smith. I took mayonnaise with lemon juice. The taste of this mayonnaise is soft, there is a slight sourness. It seems to me that for sweet pastries you need to choose mayonnaise with a not pronounced taste, without sharpness and without a clear taste of mustard.
Step 2:
Beat the eggs into a bowl and whisk with a sugar mixer into a fluffy airy foam.
Step 3:
Add mayonnaise, soda and salt to the beaten eggs. Whisk everything again until smooth.
Step 4:
Sift flour and add to the dough. Mix until smooth with a spatula or mixer at low speed.
Step 5:
Wash the apples, dry them, cut them in half and remove the core. Cut the apples into small slices.

Usually I get a more dense biscuit dough. Either it was the mayonnaise that affected it, or my new planetary mixer whipped everything up to such a state. I haven't figured it out yet. But the fact that the charlotte turned out to be beyond praise is a fact.
