Not many housewives know how to cook goat meat properly, so they are in no hurry to introduce it into the diet of the family. And in vain, because this meat is considered very valuable. It contains a lot of nutrients and important trace elements. Meat is well digested, so it can be eaten at any age. A distinctive feature of goat meat is the absence of parasites in it. One of the reasons why housewives are in no hurry to cook goat meat is an unusual specific smell. The reason for this is improper processing of the carcass when the meat comes into contact with the animal's skin. So a properly butchered carcass never smells bad. To prepare this dish, it is not necessary to take the flesh of goat meat. The back and ribs will do well.
1. I wash the goat meat under running water, let it dry. You can blot the meat with paper towels. If there is excess fat, it can be cut off. You also need to clean the meat from the films.
2. Garlic is cleaned, passed through a press. We tear off the leaves from one of the rosemary twigs. We put the garlic gruel in a bowl, we also put rosemary here. Pour olive oil, mix.
3. Carefully rub the meat with the prepared mixture from all sides. We put the goat meat in a bowl, cover with a lid or cling film, and send it to the refrigerator for 2 hours. During this time, the meat will be marinated. There is also an option to put the meat in a bag, pour the marinade remaining in the bowl. Tie the bag and send it to marinate in the refrigerator.
4. Meanwhile, peel the potatoes. If the vegetables are young, they can be cleaned with a kitchen metal scraper. Then I wash the potatoes, cut each in half or into quarters, depending on the size.
5. Preheat the oven to 160 degrees, select the upper and lower heating. We put the potatoes and meat in a baking dish, salt and pepper to taste, add the remaining rosemary sprigs. If desired, you can add other aromatic herbs, herbs. Bake for 35-40 minutes until golden brown.
