Step 1:
How to make potato dough for pies? Prepare the necessary ingredients. Potatoes should be thoroughly washed with a brush under running water. Wash the egg and dry it with napkins.
Step 2:
Peel the potatoes, cut into pieces, pour cold water in a saucepan.
Step 3:
Bring the potatoes to a boil over high heat, add salt. Cook the potatoes at a moderate boil until tender. The cooking time will depend on the varietal characteristics of the vegetable. The finished potatoes should be absolutely soft and easily pierced with a knife.
Step 4:
Drain all the water from the potatoes, mash it with a pusher so that there are no lumps.
Step 5:
Add butter to the potatoes, mix. You can do this while chopping potatoes. Cool the mashed potatoes. You can transfer it to another container so that the potatoes cool down faster.
Step 6:
Add raw egg to the cooled mashed potatoes. Tap again so that the egg is evenly distributed throughout the mass.
Step 7:
Sift flour with baking powder. This will increase the loosening ability of the latter.
Step 8:
Pour a little more than half of the sifted flour into the potato mass, mix. Add the rest of the flour in small portions, stirring the dough each time. Flour may need a little more or less. It depends on its properties and quality. I used premium wheat flour. But for this dough, you can take flour of the first grade, it is also suitable for unsweetened baking.
Step 9:
Do not add too much flour so that the dough does not turn out dense. Pies made from such dough will be too tight. The dough should be soft, pliable, quite a bit sticky to the hands. The potato dough is ready and you can form pies.
Step 10:
To do this, divide the dough into equal parts of the desired size. When forming pies, pour flour on the table so that the dough does not stick. Put the filling on the rolled part of the dough (I have green onions with boiled egg) and form a pie. Potato dough pies can be baked in the oven or fried in a frying pan, adding vegetable oil, until golden brown. Have a good baking!
Options for fillings for potato dough pies can be stewed cabbage, rice with boiled egg, fried minced meat, fried mushrooms, green onions with boiled egg. Or you can just make tortillas and serve them instead of bread.
If there is mashed potatoes left from yesterday's dinner, then it will take a minimum of time to prepare the dough. But in this case, you need to take into account that mashed potatoes served as a side dish usually contain milk. Therefore, you may need more flour than indicated in the recipe.
I baked pies in the oven. From this amount of dough, 12 small soft and delicious pies turned out.
