Step 1:
Prepare the ingredients for the aspic dough. We drive a chicken egg into a bowl. If desired, chicken eggs for such a dough can not be used at all, but with their use, baking will still be tastier and more delicious. Beat the egg with a fork or whisk with the addition of salt. If the dough is being prepared for a sweet pie, then you need to add sugar to taste and vanilla if desired.
Step 2:
Pour kefir and odorless vegetable oil into a bowl with egg mixture. Mix the ingredients until a homogeneous mixture is obtained. Kefir does not have to be fresh, it will even be better if it is yesterday's, then the dough will be more lush, and the pie from such dough will rise better. The preparation of such a test is also a great way to dispose of non-fresh kefir, which you no longer want to eat without heat treatment.
Step 3:
Add soda, mix and leave the dough billet on the table for 5 minutes so that an alkaline reaction occurs between kefir and soda. Meanwhile, you can sift wheat flour. It is better to sift the flour more than once to saturate it with oxygen, the baking will also turn out more lush.
Step 4:
Pour wheat flour in batches into a bowl with liquid and knead the dough with a consistency thick as sour cream. Visually, it resembles the dough for pancakes. It is not recommended to beat and mix the aspic dough for a long time.
Step 5:
The dough is ready. You can proceed to the preparation of the filling and baking of the pie. Pies from this dough are very tender, soft and slightly juicy in taste. Bon appetit!

From such dough, you can bake both sweet pies, for example, with berries, pieces of fruit, jam and other fillings, and pies with meat, fish, chicken, egg and herbs, and so on, adding a little sugar to the dough in the first case, and not using or reducing its amount in the second.
