Cooking method
Let's start cooking pies with dough:
1. Heat the milk to 38 degrees, pour the yeast into it and stir until it dissolves.
2. Sift the flour. Add one cup to the mixture of milk and yeast, stir.
3. Cover the resulting sourdough with a towel and leave in a warm place for 40 minutes. During this time, it should increase in volume.
4. At this time, in a separate bowl, whisk the eggs with sugar.
5. Melt the butter over low heat or in the microwave.
6. Mix the sourdough, add salt to it, pour in the melted butter and eggs beaten with sugar.
7. Add the remaining flour and knead the dough. It should turn out to be soft, pleasant to the touch.
8. Cover the dough and put it in a warm place to come up for an hour. During this time, it will become 2 times more. The dough that has come up needs to be kneaded.
9. Now the dough must be divided into parts about the size of a chicken egg, form balls. Let them lie down for 10 minutes.
It's time to cook the pies directly:
10. Sort, wash, and lightly towel dry the strawberries. Cut it into medium pieces, small pieces can be left whole.
11. Mix sugar with starch. Starch is needed so that the juice does not flow out of the pies and the dough does not get wet.
12. Roll out each ball of dough into a flat cake, in the center of which put the berries, sprinkle on top with a mixture of sugar and starch. Fasten the edges of the tortilla, forming pies.
13. Grease the baking sheet with vegetable oil, put the pies on it. Let them stand for 10 minutes.
14. Brush each patty with egg yolk on top, wait 5 minutes and put the baking sheet in a preheated 200 degree oven for 25 minutes (until they become ruddy).
