Step 1:
How to grind strawberries with sugar for the winter? To do this, you need to measure only 2 ingredients. Take the berries freshly picked, ripe. I keep part of the preparation in the refrigerator, so I took the proportions of berries and sugar 1:1.25 so that the strawberries were stored longer. If the berry will be stored in a cooler cellar, you can take the amount of berries and sugar in a ratio of 1:1.
Step 2:
Pick strawberries, remove the sepals. If you come across spoiled berries, remove them completely. They can cause deterioration of the quality of the workpiece during winter storage.
Step 3:
Rinse the berry thoroughly under cold water. Put the strawberries on a clean cloth so that the excess moisture runs out and the berry dries.
Step 4:
Take a roomy, suitable pot or container. Do not use aluminum cookware to avoid harmful interaction of metal and acid contained in the berry. Put the strawberries in a saucepan, add about half the sugar.
Step 5:
Punch the berry with sugar with an immersion blender until completely homogeneous.
Step 6:
Pour the remaining sugar into the resulting puree, mix thoroughly.
Step 7:
Leave the berry at room temperature until the sugar dissolves for about 1-1.5 hours. Stir the mass periodically so that the sugar dissolves faster.
Step 8:
Wash the jars intended for storing the workpiece well. Sterilize the jars and lids. Detailed information about the rules of sterilization can be found at the link at the end of the recipe.
Step 9:
When the sugar is completely dissolved, mix the strawberry puree well again and pour into jars. Close the jars with sterilized lids. You can roll up the workpiece or screw it with screw caps. From the specified amount of ingredients, I got 2.8 liters of blank. Strawberries, ground with sugar, must be stored in a cold, dark place. At an optimal storage temperature of + 2-4 degrees, such a workpiece can be stored for 6-7 months.
Step 10:
Strawberries ground with sugar are good as an independent dessert. It can be added when cooking jelly and compotes. Bon appetit!

Note that if you want the strawberries in this form to be thicker, add more sugar or use a suitable thickener. You can also add gelatin or pectin.
