Step 1:
How to make apricot compote? To prepare the compote, prepare all the necessary ingredients. Choose ripe apricots, but dense. And close the compote immediately from the collected apricots, otherwise they may have time to spoil. Choose fruits without damage.
Step 2:
Wash the prepared apricots well in running water from contamination. Cut each apricot in half and remove the stone. Bones can be thrown out.
Step 3:
Rinse the compote jars well with soda and rinse thoroughly in warm water. Fill the jar with 1/2 or 1/3 apricot halves. The more apricots there are in the jar, the richer the taste of the finished compote will be. But, at the same time, there will be less compote in the jar.
Step 4:
Separately bring the water to a boil and pour boiling water over the apricots to the very top. Cover with a lid and let stand for 15-20 minutes so that the apricots are well warmed up. I do not sterilize compote jars. It is enough that boiling water is poured into them.
Step 5:
Then drain the hot water from the jar into a saucepan and add sugar. Put the pan on the fire and bring the syrup to an active boil. Let it boil for a couple of minutes. Cover the remaining apricots with a lid and a towel on top so that they do not cool down.
Step 6:
Pour the apricots with the finished boiling syrup a second time to the very top and close tightly with lids.
Step 7:
Turn over the finished compote jars and check for tightness. Cool the compote completely and put it in a cool place for storage. It can be a cellar or a basement. Open a jar of fragrant compote in winter and return to summer! Have a nice treat!
In this way, you can prepare compotes from any fruit or berries. Try experimenting with different flavor combinations.
For cooking, it is better to use filtered or bottled water that is neutral to taste. If you use tap water, keep in mind that it can give the dish an unpleasant characteristic taste.
