    To make wine, we must collect dark red ripe rosehip fruits in the forest before frost, sort them out. Prepare the remaining ingredients, do not wash the wild wine grapes in any case.

    Chop the fruits without removing the seeds. We use a blender for this purpose. Mix 2 liters of water and 2 kg of sugar in a saucepan, boil, simmer for 5 minutes, stirring constantly and removing the white foam. Cool the finished syrup to room temperature. In an enameled or glass container with a wide neck, add rosehip berries, sugar syrup, the rest of the water (8 liters), crushed unwashed grapes.

    The last ingredient contains wild yeast needed for fermentation. Mix, tie the neck with gauze and put the container in a dark warm (25 ° C) place for 3-4 days. Stir once a day. If signs of fermentation appear, pour the mixture into a fermentation tank (fill a maximum of 2/3 of the volume) and install a water seal (a rubber glove with a hole in the finger to drain carbon dioxide). Put the bottle in a dark place at 18-25 ° C.

    After 7 days, filter the wort through gauze to separate the pulp (solid part). Add the remaining sugar (1 kg) to the fermented juice and re-install the water shutter. After 4-6 weeks, the water seal will stop bubbling (the glove will deflate), sediment will appear on the bottom, and the wine itself will become noticeably lighter. This means that the active fermentation is over and it's time to move on to the next stage.

    Drain the fermented young wine from the rosehip through a tube into another clean container. If desired, add more sugar to taste or fix it with vodka (alcohol) in an amount of 12-15% of the volume. And leave the wine to ripen for 2-3 months in a cool place (10-16 ° C). After 2-3 months, drain the wine from the sediment into the prepared bottles, then hermetically seal with corks. Store in the refrigerator or basement. If the temperature regime of 15 ° C is observed, the shelf life is up to 2 years.

    The result is 7-8 liters of homemade rosehip wine with a strength of 11-13 degrees. The drink has an amber color, fruit aroma and a slightly tart taste. Delicious and healthy rosehip wine is ready! Bon appetit!
