Cooking method
Combine yeast-free bread starter with 1/4 of wheat flour in a separate bowl, and pour 80 ml of clean drinking water at room temperature. Mix all the ingredients together, cover with a kitchen towel and leave in a warm, quiet place for 8-10 hours or overnight. During this time, the leaven will increase and bubbles will appear on its surface. This will be the so-called sourdough for future bread.
After the sourdough has "come up" and is ready to work, you can proceed directly to the preparation of bread. To do this, sift the premium wheat flour separately into a large bowl. Add salt and sugar for a balanced taste.
In a bowl with sifted flour, transfer the sourdough and mix. Pour vegetable oil (refined sunflower or olive oil) into the same place and stir again.
Then pour in small portions of water and knead the dough. At the same time, you may need a little more or less water. It all depends on the grade of a particular flour and the percentage of gluten in it.
For convenience, the dough can first be kneaded with a tablespoon or a spatula. Then sprinkle the board or table with flour and put the dough on it. Next, knead a tight, but at the same time elastic dough with your hands, which should not stick to your hands. If necessary, add a little more flour.
Form a ball of dough, put it back in the bowl and cover with a towel. Put in a warm place for 40-50 minutes. It should "come up" and double in size.
After the dough has increased, it is necessary to press it down a little with your hands and form bread from it (round or oblong shape), and put it on a baking sheet previously covered with baking paper. Again, leave the dough to "fit" for the same amount of time.
Meanwhile, turn on the oven at 220 degrees Celsius.
As soon as the dough increases again, make incisions or patterns on top of it for future bread and put it in a preheated oven for medium division to bake for 20 minutes. From below, you need to put a deep baking tray with a small amount of water to create steam.
After 20 minutes, reduce the oven temperature to 180 degrees Celsius and bake the bread for another 20 minutes.
