It is better to take fresh meat, not previously frozen, so it will retain all the useful properties. One onion, with onion cutlets turn out juicier. According to your taste, you can add a little more or less onion. White bread for minced meat, it can be replaced with breadcrumbs, instant oatmeal.

    Pour milk over slices of white bread. The milk will not completely cover them, so they will need to be turned over several times so that they are completely soaked.

    Rinse chicken fillet under running cold water, dry with paper towels or napkins (wet meat will not be convenient to cut). Cut off the remains of bones, fat and veins from the chicken. Then cut each piece into large pieces for a meat grinder. Wash the onions and peel them off. Cut it also coarsely.

    For the preparation of minced meat, I use a fine grate, if there is no such, then you can skip the minced meat twice through a meat grinder with a grate, which is there. Chop the chopped chicken fillet, onions and bread soaked in milk in a meat grinder (if there is milk left, then let it into minced meat too).

During this time, the minced meat will cool down and it will be easier to make cutlets from it.
