Gooseberry berries will be carefully sorted. Overripe or, conversely, green berries are not suitable for compote. In the first case, the compote can ferment and deteriorate, and in the second - it just won't turn out so tasty and saturated. After the gooseberry berries have been sorted, pour them into a bowl and rinse with clean cool water from dust and dirt. We will drain the water, throwing the berries into a colander or a large sieve. Next, we spread the gooseberries on a horizontal surface and dry them. To speed up the process, you can lay paper towels under the bottom.
We also choose a ripe and unspoiled orange. Let's wash it thoroughly under running water, wipe it with a paper towel and cut it into medium-sized slices. Thus, they will remain intact, but at the same time they will give the compote a pleasant citrus flavor and aroma.
Rinse the glass jar well with detergent and pour boiling water over it.Then you need to sterilize it in the oven, microwave or over steam in any convenient way. Boil the lid for a few minutes.
Put clean and dried gooseberry berries and orange slices on the bottom of the jar.
Then pour sugar into the jar (you can put it a little more or a little less, depending on individual taste preferences).
In a kettle or saucepan, boil the necessary amount of clean water and pour boiling water over the berries in the jar. It is best if the jar is still warm after washing, so that it does not burst from a sharp temperature drop. Just in case, we boil a little more water - it should completely cover the berries and reach the very top of the dishes. That's all! The compote is poured only once.
Close the jar with a clean boiled lid. Then you need to wrap the jar in something warm until it cools down naturally, and then move it to a dark cool place - in the cellar or basement.
