Five-Minute Red Currant Jam

This recipe will be a real hit with anyone who has a sweet tooth! Five-minute red currant jam is a quick way to make a thick homemade jam in a cheerful red color with a bright, pronounced berry flavor. The actual process takes a bit more than 5 minutes, of course, but it's still plenty fast and far less fussy than the traditional method.

  • Look over the red currants carefully and sort them, removing any stray leaves or twigs that ended up in the harvest. You won't need spoiled or shriveled berries either — they won't make a juicy, tasty jam. Put the sorted berries in a bowl of water and rinse off the dust and dirt several times. Drain the dirty water and rinse the currants once more in a colander, then leave them to drain so all the excess liquid runs off. Meanwhile, make the syrup for the jam. Pour clean, cool water into a large enough pot and add all the sugar. You can bump up the sugar a little if you like, especially if there are kids or sweet tooths in the house. You'll have a fairly thick sugar mass. Set the pot over low heat and cook, keeping the heat as low as possible, until the sugar fully dissolves, stirring now and then so it doesn't scorch on the bottom. Add the sorted currants to the syrup, stir gently with a spoon so as not to crush the berries, and return the pot to the heat. Bring the berry mixture to a boil, then gently shake the pot to fold the berries through the syrup while keeping them whole. Bring it back to a boil, then turn off the heat and gently mix the berries again by tilting the pot from side to side. Put the pot back on the heat a third time and bring it to a boil once more. As soon as the jam starts to boil, take it off the heat and pour the finished currant jam into the jars you've prepared. Seal tightly with clean lids and set the jars aside until completely cool. Your red currant jam is ready! Enjoy!
