Raspberry-Currant Jam

This remarkable combination of summer berries is well worth a try! Raspberry and currant jam is a wildly delicious berry "symphony" that no one can resist. Made by this recipe, it comes out a deep red with a nice, thick consistency. Spread it on crisp toast at breakfast, or use it to fill lacy crêpes or fluffy pancakes.

  • Sort the currants and raspberries carefully, picking out any twigs or leaves from harvesting. Use equal amounts of each berry — that way the finished jam comes out bright, full-flavored, and wonderfully aromatic. Cover the berries with cool clean water and rinse off the dust and dirt. It's best to rinse them separately, since the currants and raspberries go into the jam at different stages. Extract the juice from the red currants with a juicer; if you don't have one, just crush the currants with a potato masher until they release their juice, then push them through a sieve to separate out the tough skins and stems. Sort the raspberries too and set aside half of the biggest, prettiest berries. Run the rest of the raspberries through the juicer or press them through a sieve to a smooth, loose consistency. Pour the red currant juice into a pot first and add all the sugar at once. Stir everything together and set the pot on the stove. Over low heat, stirring often, bring the currant mixture to a boil. Add the puréed raspberries to the pot and stir, bring it back to a boil, then add the whole raspberries. Stir gently so you don't crush the whole berries. As soon as the mixture returns to a boil, take the pot off the heat. The red currant and raspberry jam is ready! You can jar it right away in containers you've prepared — wash and sterilize the jars and boil the lids first. Fill the jars, seal them tightly, and let them cool completely upside down.
