- Today I want to show you how to put up a tasty, incredibly healthy berry juice from chokeberries. It comes out fragrant, delicious, and a deep, rich color — and of course it's packed with vitamins! This juice tends to win everyone over, grown-ups and kids alike. You could even serve it at a holiday table — it looks beautiful and surprises guests with its interesting flavor and aroma. A great alternative to store-bought juice! First, sort through the berries, discarding any that are spoiled or crushed, then rinse the aronia right on their clusters. Spread them out on a clean, dry towel to dry, and blot the tops with a second towel to speed things along. Next, pull the berries off the stems and remove any leaves; set the berries aside in a bowl of the right size. Rinse the cherry leaves well, too — they'll give the drink even more aroma — and spread them out to dry. Pour the water into a large pot, then add the berries and half the cherry leaves. Set the pot over high heat and bring to a boil. Once it boils, lower the heat to medium and cook for 2–3 minutes. Take the pot off the heat, cover it, and let it stand at room temperature for 2 days. When the time is up, strain everything through a colander to collect the juice and pour it into a pot of the right size. Add the citric acid, sugar, and the remaining cherry leaves. Set the pot back over high heat, bring to a boil, then lower to medium and cook for 5 minutes. Turn off the heat and fish out the leaves. Pour the juice into prepared sterilized jars (you'll need about two 1-quart jars total) and seal with sterilized lids. Wrap the jars in a blanket and let them cool for a day, then move them to storage. This juice keeps even at room temperature. All done!
