Step 1:
How to make a Snail pie? Prepare the necessary ingredients. Puff pastry is better to take yeast-free. The yeast part makes the dough heavier, and we need a light crumbly puff structure.
Step 2:
Wash the cherries, dry them and remove the seeds. Drain the juice that has been released at the same time, and better put the prepared cherries on a paper napkin so that all excess moisture is absorbed. If the cherry is frozen, pre-defrost the berries and also drain the released juice. The finished weight of the cherry after processing should be 300 g, so take the berries with a margin.
Step 3:
Defrost puff pastry. I usually use the dough in plates, but in this recipe it is better to take the dough rolled into a roll, since we will need to cut it into long strips. And the dough in the roll has just the right length. Lightly roll out the puff pastry on a flour-dusted table into an even rectangle. You need to roll out in one direction, from top to bottom, to increase the width of the layered layer.
Step 4:
Cut the dough into strips of the same width about 5 cm. You can do this with a knife or a special round pizza knife. Using a sieve, sprinkle the dough evenly with starch. This is necessary so that the juice released during baking from the cherry does not flow out of the dough.
Step 5:
Arrange the cherry berries into strips in a row. Sprinkle the berries with sugar evenly on top.
Step 6:
How to roll a snail pie? Connect the edges of the dough and pinch to make long sausages of dough with berries inside. At first I tried to pinch the edges of the dough, But the sugar does not allow the edges to stick together properly. So I started wrapping the berries in the dough (the video shows how to do it).
Step 7:
Put the resulting sausages in a round baking dish lined with parchment (Ø 26 cm) seam down. Connect the edges of the sausages together so that the juice from the berries does not flow through the joints of the dough pieces. I still have some puff pastry left, from which I rolled small balls to decorate the cake. If you have unused berries left, you can make such balls with cherries inside.
Step 8:
Sprinkle the snail with almond petals as desired. You can not sprinkle anything at all. Place the pie in a preheated 180 ° C oven for about 40 minutes.
Step 9:
Remove the finished snail from the mold, transfer it to a dish, let it cool slightly and sprinkle with powdered sugar if desired. Cut the snail into portions and serve it to the table, you can with a scoop of vanilla ice cream - it is perfect for this pie. Bon appetit!
