Step-by-step cooking

Cooking time: 60 d
  1. Step 1:

    Step 1.

The main component of grape wine is, of course, grapes. You can take any grape: take red, you get red wine, white - white wine, pink - pink wine.

  2. Step 2:

    Step 2.

Do not wash the grapes in any case - the berries contain bacteria necessary for fermentation. Remove the berries from the twigs and put them in a fermentation tank.

  3. Step 3:

    Step 3.

Mash the grapes with a pusher or just with your hands. We only need the cake, so drain the grape juice and use it in other dishes or for making the first wine. The wine from the cake is called the second. Leave the cake in a fermentation tank.

  4. Step 4:

    Step 4.

I immediately put wine from two types of grapes. Prepared and dark in a similar way.

  5. Step 5:

    Step 5.

Dark grapes crushed with a blender, then strained. The juice was sent to the preparation of churchkhella, and the cake, as well as with pink grapes, was put in a fermentation tank.

  6. Step 6:

    Step 6.

Dilute 700 g of sugar with water. Water for the best fermentation should be unfiltered and not bottled. Pour the resulting syrup into the cake, mix.

  7. Step 7:

    Step 7.

Put a water seal on top or put on a disposable glove. Remove to a dark place and store at a temperature of 20 to 26 degrees. When fermentation begins, the glove will inflate. Mix the contents of the container every day with a stick, just with your hands or by turning the jar in different directions.

  8. Step 8:

    Step 8.

After 12-15 days, when the glove is lowered, strain the resulting wort, and squeeze the cake.

  9. Step 9:

    Step 9.

    Black cake also strained.

  10. Step 10:

    Step 10.

Pour into another container, add the remaining sugar and repeat the procedure with a glove. Again, wait for the end of fermentation, when the glove falls off, and a precipitate appears at the bottom.

  11. Step 11:

    Step 11.

Carefully pour the wine into the bottles, taking care that the sediment does not get into the bottle. You can use a special tube from a medical dropper.

  12. Step 12:

    Step 12.

Seal the wine bottles well and put them in a cool place with a temperature below +16 degrees for at least a month, preferably 2-3. Do not allow air to enter the bottles, otherwise the wine will turn into vinegar. The finished wine can be stored for up to five years. The fortress is about 13-15 degrees.

  13. Step 13:

    Step 13.

The second wine must be prepared with sugar and water. Similarly, you can make wine without sugar if you use grape juice together with cake. In this case, repeat the double fermentation, but do not add any sugar or water. In this case, the fermentation start time may increase. Here is a wine made from pink grapes.

  14. Step 14:

    Step 14.

And this is red. The second wine turned out to be not very saturated in color, because I cooked it only from grape cake, without grape juice, especially with the addition of water. The strength of the finished wine is about 15 degrees. It's dessert and I would call it semi-sweet. Observe the measure when drinking alcohol! Bon appetit!
