It is best to choose ripe fruits for jam, but not too hard to the touch, but already juicy enough, sweet and fragrant. We sort out the prunes, then wash them under warm running water and put them on a dry and clean towel to dry off excess moisture. After we cut the prunes into halves, we take out the bones. Halves of fruits are cut into halves across. If the prunes are large enough, you can cut each half into four parts.

We put the prune pieces into a large stainless steel saucepan with a thick bottom. You can also use other dishes suitable for cooking jam, for example, an enameled saucepan will do. We cover the prunes with sugar and leave them in this form overnight. Do not forget to cover the pan with a lid. During this time, enough juice should be released from the prunes.

The next day we put the pan on medium heat and bring its contents to a boil, not forgetting to stir the future delicacy. As soon as the mass boils, cook it after that for 5 minutes. Do not forget to interfere, otherwise the jam may burn and be spoiled by this. 5 minutes have passed - turn off the fire and leave the jam to stand for 2-3 hours.

When this time has passed, we put the pot of jam on medium heat again. Add vanilla sugar and bring the delicacy to a boil. We mix it all the time. After boiling, we wait for literally half a minute more, and then we put the jam into pre-prepared sterile jars, roll up the lids and turn the jars upside down. We cover the jars with jam with a blanket, leave it in this form for a day.

Fragrant prune jam is ready. We hide it in a safe place until winter, so that it will not be eaten in the first few days)) Bon appetit and delicious tea parties!
