- Let's get to the blackberries. There's no need to rinse them under the tap—in fact it's better not to, since you can crush the berries and lose some of the juices you need. A quick splash of water is plenty. Take sterilized 1-liter glass jars and fill them about a third full with berries. Next, make the syrup to pour over them: put 3 liters (about 12 cups) of water in a pot and add 150 g (about ¾ cup) of sugar. Bring it to a boil and keep it boiling for up to 5 minutes so the syrup thickens a little. Pour the hot syrup right over the blackberries in the jars and screw the sterilized lids on nice and tight. Turn the jars upside down, wrap them in a blanket, and leave them for a full day—don't open them during that time. Then remove the blanket, turn the jars right-side up, and let them stand until completely cool. And there you have it—compote, quick and easy. The berries are never boiled, so all their goodness stays right in the jar. Stock up your pantry!
