Pumpkin Juice with Pulp for Winter
This bright drink refreshes, invigorates, and lifts your spirits! It's a simple way to put up pumpkin juice for the winter — drink it right away, or can it so you can treat yourself to a little piece of orange sunshine on cold evenings. Step 1:
Gather the ingredients. For 1 kilogram of pumpkin I used 1 level cup of sugar, but you can use a little less to taste — say 2/3 or 1/2 cup. A 200 ml cup filled to the rim (as in this recipe) holds about 120 grams, so keep that in mind if you weigh your sugar on a kitchen scale instead of measuring by the cup.

Start by peeling the pumpkin and cutting it into small, roughly even pieces.

Transfer the pumpkin to a pot, cover it with the water, and set it over moderate heat.

Cook the pumpkin until soft — pierce a few pieces with a thin-bladed knife to check that it's done; don't overcook it. Once it's tender, carefully transfer it to a blender. Don't pour out the cooking liquid.

Blend until smooth and puréed.

Add sugar to taste and stir it in well.

Now stir the puréed pumpkin together with the reserved cooking liquid and mix again.

Pour the finished drink into sterilized jars, seal them, and let them cool. After a couple of days the juice is ready to enjoy — its flavor is wonderful! Now you know how to make pumpkin juice with pulp for the winter.
