Step-by-step cooking
Step 1:
Prepare the products. Vodka for any tinctures should always be of high quality, because often the tincture is used for medicinal purposes. For the best flavor filling, rowan berries are recommended to be collected after the first frost, then the fruits become softer and a little sweeter.
Step 2:
Remove rowan berries from the ridges, sort through, removing the spoiled and unripe.
Step 3:
Rinse well under cool running water, let the water drain and dry on a towel.
Step 4:
Then I put them in the tray and send them to the freezer for a day, this is in the case when the rowan was plucked before frost. Freezing loosens the structure of the fruit, the juice separates much better. That is why berries should be frozen before preparing any tinctures.
Step 5:
Wash the berries without defrosting with cool water in a colander, let the water drain. Then cut the rowan, but not too much, so that the berries remain whole. The disadvantage of chopping berries is that the finished tincture turns out to be very cloudy and requires several stages of filtration. And so the berry will give the juice well, but the drink will turn out to be more transparent. You can put it in a jar right away, but it's more convenient for me in a wide container, at the same time I check the quality of the berries again, then I shift it.
Step 6:
Prepare the syrup: - pour sugar into boiling water, stirring continuously, let it boil for 2-3 minutes. Pour hot syrup over the rowan in a jar and let it cool completely without covering it with a lid.
Step 7:
Pour vodka into the cooled syrup with berries, mix. Close the lid tightly and remove to infuse in a dark place at room temperature for three weeks. After 2-3 days, do not forget to shake the jar.
Step 8:
After 21 days, filter the tincture through several layers of gauze, pour it into a bottle and put it in the refrigerator for at least 2-3 weeks to stabilize the taste. The longer the rowan drink will stand, the richer its taste and aroma will become. Then you can drink it as an alcoholic drink, add it to tea, use it for the prevention of colds, with general weakness of the body.
