Apricot Jam with Coffee Beans

A fruit jam with a really unusual flavor. This apricot jam is made together with coffee beans. The coffee lends the dessert a slightly tart note without affecting its color at all — the jam keeps its lovely amber hue. The unexpected flavor surprises a lot of people when they taste it.

Cooking method

    For apricot jam with coffee beans you'll need: apricots, sugar, a lemon, and whole coffee beans.

    Wash and dry the apricots, remove the pits, and weigh them. Purée half of the apricots in a blender.

    Coarsely chop the remaining apricots.

    Wash and dry the lemon and squeeze out the juice.

    Crush the coffee beans so they release more of their aroma. You don't want a coffee grinder here — we're not after ground coffee. Use a mortar instead, so the beans stay in small pieces. This coarse crush is what keeps the jam from turning coffee-brown as it cooks.

    Pour the crushed coffee onto a clean piece of cheesecloth folded several times over. Gather it into a pouch and tie it shut.

    In an enamel pot (the one you'll cook the jam in), combine the chopped apricots, apricot purée, sugar, and lemon juice.

    Mix everything well.

    Tuck the coffee pouch into the fruit mixture and let it sit on the counter for 1.5 hours.

    Set the fruit mixture over the heat and bring to a boil. Simmer over low heat for 15–20 minutes, stirring occasionally. Drop a bit of jam onto a saucer — if it holds its shape and doesn't run, the jam is ready.

    Take the jam off the heat and remove the coffee pouch.

    To keep the jam for winter, sterilize a suitable jar and lid, fill it with the jam, and seal it tightly. Store it in the refrigerator or a cellar. If you plan to eat it right away, just spoon it into a clean jar, close it with a regular lid, and keep it in the fridge. Enjoy!

  • I'll admit the recipe gave me pause at first — would apricots and coffee really work together? But I decided to try it. Time and again I've found that an unexpected pairing of ingredients gives an unusual but delicious result, and this jam was no exception. The dessert has a very delicate texture with a light tartness. To play up the coffee flavor and aroma, you can bump the coffee up to 4–5 tablespoons, but I think 3 is plenty. If you don't care for the tartness, add more sugar to taste. Family and friends I shared it with were intrigued by the "mystery" flavor — some couldn't even tell right away that it was made with coffee — but everyone loved it. The jam also works as a filling for sweet pastries. This amount made me about 800 ml of jam.
