Zucchini "Pineapple" with Cherry Plum and Mint for Winter

Step 1:
This unusual combination surprises a lot of people. The tang and slight tartness of cherry plum give ordinary zucchini a pineapple-like flavor — you can even smell pineapple while you're pouring the syrup over the fruit and zucchini. Various spices deepen the flavor here; besides spices you can add lemon zest, but I'll use cloves and dried mint leaves. This recipe makes three 1-quart (1-liter) jars.

Step 2:
Get everything ready for canning — wash and sterilize the jars however you prefer and boil the lids. Peel the zucchini and wash the cherry plums. Put the cherry plums in the bottom of each clean jar (about 300 g per jar).

Cut the peeled zucchini into rounds or half-moons, depending on size. Add them to the jars with the cherry plums, fill the jars to the neck with boiling water, and let them warm through for 15 minutes.

Drain that water into a pot, add the sugar, cloves, and mint, and boil it into a syrup. Pour the hot syrup back over the zucchini and cherry plums, seal the jars, turn them upside down, and wrap them up until cool.
