- For this treat, choose a melon that's ripe, sweet, and juicy. Wash it, cut it open, and scoop out the flesh, then cut the flesh into small cubes about 1/2 inch (1 cm) on a side and transfer them to a large bowl. Next, wash the apples, peel them, halve them, core them, and cut them into cubes about the same size as the melon. Put the chopped apples in a separate bowl and toss them with freshly squeezed lemon juice so they don't darken. Set a large pot over low heat, add the apple and melon cubes, cover with the sugar, and stir. Cook the jam until it thickens to your liking — the exact consistency is up to you. Be sure to prepare your jars ahead of time, sterilizing them by whatever method is convenient — the oven works well. Sterilize the lids, too. Here's how: wash the jars with baking soda, rinse well, and set them on a rack in a cold oven. Add the soda-washed lids to the oven as well. Turn the oven on to 250°F (120°C) and heat for 15 minutes — that's right for quart (1-liter) jars; for pint (half-liter) jars, 10 minutes is enough. Ladle the hot jam into the prepared sterile jars and seal them with the lids. Turn the jars upside down, wrap them in a blanket, and leave them like that until the jam has cooled completely. Once cooled, the jars can be put away for storage — this jam keeps just fine even at room temperature in an apartment. Happy, sweet canning!
