Fish Balls with Beets, Eggs, and Cheese
Eye-catching cold appetizers with a refined flavor! These snacks are seriously tempting, beautiful on the plate, and easy to put together.
Cooking method

Step 1:
Open a can of fish (sardines or a similar oily fish work well) and drain off the liquid.

Set aside a few nice pieces of fish for garnish, then put the rest in a bowl and mash it thoroughly with a fork to make the filling.

Add 3 tablespoons of cream cheese to the mashed fish and mix well.

Step 4:
Grate four hard-boiled eggs on the fine side of a box grater.

Step 5:
Take two more hard-boiled eggs and slice them crosswise into rings.

Pop out the yolks from the rings and set the whites aside.

Add those reserved yolks to the grated eggs.

Stir the grated egg mixture into the fish filling and mix until smooth.

Finely chop the dill.

Stir the dill into the filling for a fresh note, mix well, and divide the mixture into three roughly equal portions.

Spread the first portion of filling onto toasted baguette slices.

Top each one with a reserved piece of fish, a thin slice of lemon, and a sprig of parsley.

Fill the egg-white rings with the second portion of filling.

Arrange the filled rings on lettuce leaves.

Grate the boiled beet and potato.

Mix the grated beet and potato into the third portion of filling.

Roll this mixture into bite-sized balls.
