Marinated Roasted Peppers with Garlic
An appetizer made from just a handful of ingredients! Bell peppers marinated with garlic are simple, quick, and fuss-free. The result is a bright, cheerful appetizer that's every bit as delicious as it is pretty.

Step 1:
How do you marinate peppers? Gather your ingredients. Choose peppers that are firm, juicy, and free of blemishes — even though we'll be roasting them before marinating. Peppers in different colors work best: red, yellow, and orange.

Step 2:
Thinly slice a clove of garlic, then add any vegetable oil (it's especially good with flavorful oils — sunflower, sesame, or olive), apple cider vinegar, salt to taste, and pepper. Stir the dressing well and let it sit to develop flavor. You can press the garlic through a garlic press for a sharper kick. My version leaves the garlic in slices, which are easy to pick out if you'd rather not eat it raw or if you're serving kids.

Step 3:
Roast the sweet bell peppers until charred in spots on all sides, either in the oven or in a dry covered skillet. Let them cool a little, then put them in a plastic bag and tie it shut. The peppers will soften and slip out of their skins easily. (Brightly colored peppers look nicer here, and they're much sweeter, too.)

Step 4:
Once the peppers are warm, take them out of the bag and peel off the skins — it's easy now. Cut the peppers into cubes or strips.

Put the cut peppers in a bowl or a jar, pour the dressing over them, and let them sit for at least a couple of hours. Then serve. It's absolutely delicious! You can also put it up for the winter, but I'd recommend keeping it in the fridge.
- Bell peppers marinated with garlic are pure heaven for anyone who loves a tangy pepper appetizer. Peeling them takes a bit of effort — you have to roast or char the peppers first — but after a light roasting they turn soft and pliable, soaking up all the flavor of the dressing. It's especially good made with a fragrant oil, and wonderful served alongside steaming boiled potatoes, any meat, or poultry. Give it a try — everyone loves it!
