Step 1:
How to make cakes on sour cream? Prepare all the ingredients according to the list. Sift the flour through a fine sieve. Butter can be of any temperature - we will still melt it.
Step 2:
In a wide deep bowl, whisk a raw egg with a fork or whisk.
Step 3:
Add sour cream and whisk again.
Step 4:
Melt the butter in a water bath or in the microwave. Pour the melted butter into the egg-sour cream mixture, stirring quickly.
Step 5:
Add sugar and mix well again.
Step 6:
Add baking soda to the sifted flour.
Step 7:
Add a little salt (a pinch) to the flour.
Step 8:
Mix the flour into the egg-milk mixture, kneading the dough. Focus on the density of the dough, for this do not add all the flour at once, only a spoonful or two.
Step 9:
The dough should be moderately cool, not sticky, holding the shape. Too steep will not work, because the cakes from it will turn out to be harsh. Therefore, keep an eye on the volume of flour!
Step 10:
Leave the dough to rest for 15 minutes. During this time, the gluten will swell and it will be easy to work with the dough.
Step 11:
Cover the dough with a towel or a bag so that it does not wind up.
Step 12:
Divide the dough into 7 or more pieces.
Step 13:
Roll out each part into a circle according to the diameter of your frying pan. Make the pricks with a fork.
Step 14:
Gently transfer the dough to a preheated dry frying pan with a rolling pin. If you did everything right, the raw tortillas will be very tender. So don't tear them.
Step 15:
Fry the tortillas in a dry preheated frying pan under the lid.
Step 16:
Flip to the other side and fry without a lid until cooked. Make sure that they do not burn, the tortillas should fry quite quickly, so do not leave the stove.
Step 17:
Brush each tortilla with butter and spread them on top of each other in a pile.
Step 18:
These are the ruddy cakes you get! Enjoy your meal!
They really reminded me of cakes for a simple cake, so we ate some of the tortillas still hot, and those that remained I cut in half and smeared with boiled condensed milk - it turned out a small delicious cake in a hurry! Try it!
When I fried them, the aroma was such that all the household came running - they thought I was cooking a cake! They really resemble cake cakes - if you add 2 tablespoons of sugar, like me, they will turn out sweeter and they can be served with tea.
