Chinese Caramel Apples

    1. Rinse the apples under cold water and pat them dry with paper towels. Cut them in half, core them (remove the tough part and seeds), and cut into wedges or bite-size pieces. Set aside. 2. Make the batter to coat the apples: sift the wheat flour into a large bowl, crack in the egg, and add a little water. Whisk until smooth, making sure to break up any lumps of flour. 3. Set a heavy-bottomed skillet on the stove and pour in plenty of vegetable oil. 4. Add the apple pieces to the batter and toss so they're evenly coated on all sides. 5. Once the oil is very hot, add the battered apples and fry over medium heat, turning to color all sides. The oil should come at least halfway up the apple pieces. 6. Transfer the fried apples to a paper-towel-lined plate and let the excess oil drain off. 7. Now make the caramel: pour the sesame oil into a small saucepan and heat it, then add the sugar and stir. Cook over low heat, stirring constantly with a spoon or spatula, until the sugar fully melts and combines with the oil into a smooth, liquid brown caramel. Stir in the sesame seeds. 8. Coat the battered apples in the sesame caramel. Enjoy!
