- Preheat the oven to 275°F (135°C), and put the time to good use while it heats. Rinse the beef under running water and pat it thoroughly dry with sturdy paper towels — you don't want excess moisture. Season both sides with salt, ground black pepper, and any meat-friendly spices. Grinding the pepper fresh, right before it goes on, gives the beef a wonderful aroma. Use whatever spices you like — a blend of ground peppers works well, or a ready-made spice mix for meat. Rub the seasoning into all sides of the meat. Lightly oil a baking sheet or dish, set the beef on it, and put it in the hot oven. Cook until the internal temperature reaches 122°F (50°C), using a meat thermometer to check; the meat should be very nearly done. Turn off the oven and let the meat rest inside for 10 minutes. Meanwhile, heat a skillet with the remaining oil over high heat. When the oil is smoking hot, add the meat and sear for 1 minute, then flip and sear the other side for another minute, until a gorgeous crust forms.
