Dalgona Coffee
The photogenic star of every social network! Dalgona is a cold drink of milk topped with whipped instant-coffee foam. Thanks to some Korean TV personalities, it spread through the blogging world and became wildly popular everywhere. The look is downright stunning - the taste, well, it's an acquired one.
Cooking method

Step 1:
How do you make dalgona coffee? Gather everything you'll need. The milk can be any fat content, dairy or plant-based. The amount given is approximate, based on the size of my glasses. The coffee is plain freeze-dried instant. You'll need hot water.

Pour hot water into a tall mixing container and add the sugar and coffee.

With a mixer, beat the mixture for 1-2 minutes on low speed. Thanks to the surfactants in instant coffee, the foam comes out very thick. You can adjust its thickness however you like - from a slow-flowing, syrupy texture to fully stable, like the stiff peaks of whipped egg whites. It depends on how long you beat it and won't affect the flavor at all.

Step 4:
Add ice to the glasses to taste and pour in the milk, leaving 2-3 centimeters of room at the top.

Spoon the coffee foam over the milk. That's it! Your cool drink is ready - go post those photos :)
- As it happens, I'd never worked with freeze-dried coffee before, so I sprinkled a few granules on top for looks. What a mistake that was! Those granules taste, to put it mildly, not great... Better to garnish your dalgona with plain chocolate shavings if you want a topping.
- By the way, the drink is named for its resemblance to a kind of Korean street candy. To me, dalgona is loved more for its looks than its flavor. It tastes like sweet milk with notes of coffee.
- Before drinking, I think it's best to stir the coffee layer into the milk. Eating it on its own is an acquired pleasure.
- All in all, for social media dalgona gets a solid A from me - your followers will love it!
- But for everyday life, give me a good old cappuccino made of 100% Arabica :)

- How do you make good ice? Use cold boiled or still purified water. Don't use tap water - it'll give the drink an unpleasant taste. Boil the water for about 2 minutes. Cool it. Boil it again. Cool to room temperature. Pour into ice molds and freeze until solid.
